Lasagna with Mushroom Mince

A hearty and distinctive take on lasagna, where finely chopped mushrooms act as a plant-based “mince” and combine beautifully with tomato, pepper, aromatic spices, and melted cheese. A rich and flavorful dish, perfect for a satisfying meal with a different twist.

Ingredients

  • 10–15 large champignon mushrooms
  • 1 large bell pepper
  • 1 large tomato, peeled
  • 1 onion
  • 1 clove of garlic
  • 1/2 glass of wine
  • 1/2 glass of water
  • 1 tsp tomato paste
  • 2 tbsp olive oil (1 + 1)
  • 5–6 lasagna sheets, cut in half
  • 1 bay leaf
  • Spices: nutmeg, cinnamon, paprika, coarsely ground pepper, salt
  • 3–4 tbsp grated graviera cheese

Instructions

  1. Finely chop the mushrooms in a blender, taking care not to turn them into a purée, and sauté them with the garlic and onion in 1 tbsp olive oil.
  2. Transfer the mixture temporarily to another bowl.
  3. In the same pan, sauté the bell pepper, then return the mushroom mixture and combine everything.
  4. Deglaze with the wine, then add the tomato, tomato paste, spices, and bay leaf.
  5. Add the water and let everything simmer for a few minutes.
  6. Add the lasagna sheets, pressing them down so they are covered by the sauce. Cover and cook over low heat for about 10 minutes.
  7. Finally, add the cheese, let it melt, and serve.
